Here, special guest Chef Jack Ovens is making the most luxurious apple crumble slice. It’s super easy to make, tastes fantastic and only requires a few simple ingredients. When you take it out of the oven it will have a beautiful crunchy pastry on the bottom, soft, warm spiced apples in the centre and a delicious crumble on the top, that’s full of flavour.
This buttery and fluffy apple crumble slice falls apart in your mouth and tastes delicious. It’s the perfect sweet treat to portion into Fresh vacuum seal containers for the week ahead or freeze so you have dessert for another occasion.
Crumble
180g (6.2oz) plain (all purpose) flour
1 teaspoon (4g) baking powder
125g (4.4oz) unsalted butter
165g (5.9oz) caster sugar
Apple Filling
6 granny smith apples, peeled & diced
1 tablespoon (14g) unsalted butter
½ teaspoon (1.5g) ground cinnamon
¼ teaspoon (0.1g) ground nutmeg
1 tablespoon (20g) caster sugar
½ cup (125ml) water
Base
100g (3.5oz) unsalted butter, softened
110g (3.8oz) caster sugar
1 egg
150g (5.29oz) plain (all purpose) flour
1 teaspoon (4g) baking powder
1 tablespoon (20ml) full fat milk
1. Preheat oven to 160.c - 320.f. Grease and line a baking pan with parchment paper (20cmx30cm).
2. Mix the flour, baking powder, and sugar in a bowl to make the crumble. Rub in the butter until it resembles fresh breadcrumbs.
3. To make the apple filling: peel and chop apples. Place all ingredients into a saucepan and cook over low heat for 10 minutes or until softened. Remove from heat and allow steaming for 4 minutes with the lid on.
4. To make the base: Combine the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder, and milk.
5. Spread the base in the bottom of the prepared pan. Top with apple filling, and then spoon over the crumble topping. Bake in the oven for 40 – 50 minutes or until golden.
6. Serve dusted with icing (confectioners) sugar.
7. Stored in airtight containers, these will last 6 days in the fridge and six month in the freezer.
