If you love your oats but want something different from the usual stovetop porridge or overnight oats, you’re going to love this! These mixed berry baked oats are soft, lightly sweet, and pudding-like in texture. It’s a wholesome breakfast that feels like a treat.
This easy, one-bowl recipe is perfect for busy mornings or meal prepping your week ahead. Made with just a handful of pantry staples, it’s loaded with rolled oats, juicy berries, crunchy nuts, and naturally sweetened with banana and maple syrup. A hint of cinnamon and vanilla brings it all together. Whether you enjoy it as breakfast, a hearty snack, or even a healthy dessert, this bake will quickly become a go-to comfort food favourite. To enjoy warm, simply remove the lid and microwave for 30–60 seconds, or pop into a 180°C (350°F) oven for about 10 minutes. They’re best served warm, but not too hot!
Oats: Stick with rolled oats for the best texture. Avoid using quick oats or steel-cut oats. Be sure to mix and bake immediately. Don’t let the oat batter sit around, or it’ll soak up too much liquid and become dry.
Dairy-Free: Use a plant-based milk and coconut oil in place of butter. Top with your favourite dairy-free yogurt.
Gluten-Free: Use certified gluten-free oats to keep things coeliac-safe.
Egg-Free Option: Eggs add protein, flavour, and help the oats hold together. For a vegan version, try replacing each egg with a chia seed mix: 1 tbsp chia seeds + 3 tbsp water, let it gel for 10 minutes before using. We haven’t tested it yet. Let us know how it goes in the comments.
Makes: 5-6 depending on portion size.
1 banana mashed
2 eggs
¼ cup (55g) butter, melted
2 teaspoons vanilla extract
1 ¾ cups (450ml) milk of your choice
1/3 cup maple syrup
1 teaspoon baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon salt
3 cups rolled oats
½ cup walnuts, pecans and almonds chopped
2 cups fresh or frozen mixed berries, (do not defrost)
1. Preheat oven to 180° C/ 350° F
2. In a large bowl combine all the wet ingredients.
3. Add the oats, baking powder, salt, cinnamon and half of the nuts, mix thoroughly.
4. Stir in half of the berries. To avoid staining the batter, do not over-stir.
5. Divide the batter between 5-6 450 ml Luvele Fresh glass containers.
6. Sprinkle with remaining berries and nuts
7. Place the containers onto a large baking tray
8. Bake for approx. 20 mins or until the edges are firm and brown but the centre is still moist.
9. Enjoy immediately or let cool before placing the lids on.
10. Employ the hand pump to ensure maximum freshness before storing in the fridge.
